Ingredients

  • Red lentils
    200 g 7 oz rinsed
  • Sweet potato
    400 g 14 oz peeled and cubed
  • Onion
    1 medium 1 medium finely chopped
  • Garlic cloves
    3 cloves 3 cloves minced
  • Carrot
    150 g 5.3 oz diced
  • Canned chopped tomatoes
    400 g 14 oz one standard can
  • Vegetable broth
    750 ml 3 cups
  • Olive oil
    2 tbsp 2 tbsp
  • Cumin powder
    1 tsp 1 tsp
  • Smoked paprika
    1 tsp 1 tsp
  • Ground coriander
    1 tsp 1 tsp
  • Salt
    to taste to taste
  • Black pepper
    to taste to taste
  • Fresh coriander leaves

Method

    Heat olive oil in a large pot over medium heat.
