Ingredients

  • red bell pepper
    1 medium 1 medium sliced
  • zucchini
    1 medium (200g) 1 medium (7 oz) sliced
  • red onion
    1 small (100g) 1 small (3.5 oz) sliced
  • olive oil
    15 ml 1 tbsp
  • salt
    1 g 1/4 tsp
  • black pepper
    1 g 1/4 tsp
  • pita bread
    2 pieces (100g) 2 pieces (3.5 oz)
  • hummus
    60 g 1/4 cup
  • baby spinach leaves
    30 g 1 cup
  • feta cheese
    30 g 1 oz crumbled, optional

Method

    Preheat oven to 200°C (400°F).

    Toss bell pepper, zucchini, and onion with olive oil, salt, and pepper.

    Spread vegetables on a baking sheet and roast for 20–25 minutes until tender.

    Warm pita bread slightly in oven or toaster.
