Moroccan Chickpea and Carrot Tagine

Ingredients

  • carrots
    400 g 14 oz peeled and sliced
  • canned chickpeas
    400 g 14 oz rinsed and drained
  • onion
    1 medium (150 g) 1 medium (5.3 oz) chopped
  • garlic cloves
    3 cloves 3 cloves minced
  • olive oil
    2 tbsp (30 ml) 2 tbsp (1 fl oz)
  • ground cumin
    2 tsp (4 g) 2 tsp (0.14 oz)
  • ground coriander
    1 tsp (2 g) 1 tsp (0.07 oz)
  • ground cinnamon
    1/2 tsp (1 g) 1/2 tsp (0.035 oz)
  • vegetable broth
    400 ml 1 2/3 cups low sodium
  • diced tomatoes
    400 g 14 oz canned
  • lemon juice
    2 tbsp (30 ml) 2 tbsp (1 fl oz) freshly squeezed
  • fresh cilantro
    15 g 1/2 oz chopped
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Heat olive oil in a large pan over medium heat.

    Add chopped onion and garlic; sauté until soft.

    Stir in cumin, coriander, and cinnamon; cook 1 min.

    Add carrots, diced tomatoes, and vegetable broth.

    Simmer until carrots are tender, about 20 min.
