  • sweet potato
    300 g 10.5 oz peeled and diced
  • red bell pepper
    1 medium 1 medium deseeded and chopped
  • yellow bell pepper
    1 medium 1 medium deseeded and chopped
  • red onion
    1 small 1 small finely chopped
  • olive oil
    15 ml 1 tbsp
  • garlic cloves
    2 cloves 2 cloves minced
  • eggs
    4 large 4 large
  • fresh parsley
    15 g 0.5 oz chopped, for garnish
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Heat olive oil in a skillet over medium heat.
