Sweet Potato and Spinach Breakfast Bowl

Sweet Potato and Spinach Breakfast Bowl

Ingredients

  • sweet potato
    300 g 10.5 oz peeled and diced
  • olive oil
    15 ml 1 tbsp
  • baby spinach
    100 g 3.5 oz fresh
  • garlic clove
    1 1 minced
  • egg
    2 2 soft boiled
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Preheat oven to 200°C (400°F).

    Toss sweet potato with half the olive oil and salt.

    Roast sweet potato for 15 minutes until tender.

    Heat remaining oil in a pan. Sauté garlic for 1 minute.

    Add spinach, cook until wilted. Season with salt and pepper.

    Serve roasted sweet potato and spinach in bowls topped with soft boiled eggs.
