Ingredients

  • firm tofu
    400 g 14 oz pressed and cubed
  • vegetable oil
    2 tbsp 2 tbsp
  • red bell pepper
    1 medium (150 g) 1 medium (5.3 oz) sliced
  • broccoli florets
    150 g 5.3 oz
  • carrot
    1 medium (70 g) 1 medium (2.5 oz) thinly sliced
  • garlic cloves
    3 cloves 3 cloves minced
  • soy sauce
    3 tbsp 3 tbsp
  • smooth peanut butter
    3 tbsp 3 tbsp
  • lime juice
    1 tbsp 1 tbsp freshly squeezed
  • maple syrup
    1 tbsp 1 tbsp
  • chili flakes
    0.5 tsp 0.5 tsp adjust to taste
  • water
    50 ml 3.4 tbsp to thin sauce
  • spring onions
    2 stalks 2 stalks sliced for garnish
  • sesame seeds
    1 tsp 1 tsp toasted for garnish

Method

    Heat 1 tbsp oil in a pan over medium heat. Fry tofu cubes until golden on all sides. Remove and set aside.

    Add remaining oil to the pan. Sauté garlic until fragrant, about 1 minute.

    Add bell pepper, broccoli, and carrot. Stir-fry for 5-7 minutes until tender but crisp.

    Mix soy sauce, peanut butter, lime juice, maple syrup, chili flakes, and water in a bowl.

    Return tofu to the pan. Pour sauce over and stir to coat everything evenly. Cook for 2 minutes.

    Serve garnished with spring onions and toasted sesame seeds.
