    200 g 7 oz rinsed
  • coconut milk
    400 ml 13.5 fl oz full fat
  • vegetable broth
    800 ml 27 fl oz
  • onion
    1 medium 1 medium chopped
  • garlic cloves
    3 cloves 3 cloves minced
  • fresh ginger
    15 g 0.5 oz grated
  • curry powder
    2 tsp 2 tsp
  • chili flakes
    0.5 tsp 0.5 tsp adjust to taste
  • olive oil
    1 tbsp 1 tbsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste
  • fresh coriander
    a handful a handful chopped for garnish

Method
