  • sweet potatoes
    400 g 14 oz peeled and diced
  • black beans
    240 g 8.5 oz canned, drained and rinsed
  • olive oil
    15 ml 1 tbsp
  • ground cumin
    5 g 1 tsp
  • smoked paprika
    5 g 1 tsp
  • salt
    2 g 0.5 tsp
  • corn tortillas
    8 pieces 8 pieces
  • avocado
    1 medium 1 medium sliced
  • fresh coriander
    10 g 0.35 oz chopped
  • lime
    1 medium 1 medium cut into wedges

Method

    Preheat oven to 220°C (430°F).

    Toss diced sweet potatoes with olive oil, cumin, paprika, and salt.

    Spread sweet potatoes on a baking sheet; roast for 20 minutes until tender.

    Warm black beans in a small pot over medium heat.

    Heat tortillas on a dry pan or in the oven.
