Spiced Chickpea and Avocado Salad

Ingredients

  • canned chickpeas, drained and rinsed
    240 g 1 cup use low sodium if preferred
  • avocado, diced
    150 g 1 medium
  • cherry tomatoes, halved
    120 g 1 cup
  • cucumber, diced
    100 g 1/2 cup
  • red onion, finely chopped
    30 g 1/4 cup
  • fresh cilantro, chopped
    10 g 2 tbsp
  • lemon juice
    15 ml 1 tbsp
  • olive oil
    15 ml 1 tbsp
  • ground cumin
    2 g 1/2 tsp
  • smoked paprika
    2 g 1/2 tsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Heat olive oil in a pan over medium heat.

    Add chickpeas, cumin, smoked paprika, salt, and pepper.

    Cook chickpeas for 8-10 minutes, stirring occasionally, until slightly crispy.

    In a bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
