Maple-Glazed Chicken with Roasted Carrots and Swiss Chard

Ingredients

  • chicken thighs, boneless and skin-on
    600 21 about 4 medium thighs
  • maple syrup
    60 1/4 cup
  • olive oil
    30 2 tablespoons, divided
  • carrots, peeled and cut into sticks
    400 14 ounces
  • Swiss chard, chopped
    150 5 ounces, stems removed
  • salt
    1 1/4 teaspoon, divided
  • black pepper
    1 1/4 teaspoon, divided
  • water
    30 2 tablespoons, for sautéing

Method

    Preheat oven to 200°C (400°F).

    Place carrots on a baking tray, drizzle with 1 tbsp olive oil, half salt and pepper.

    Roast carrots for 25 minutes until tender.

    Mix maple syrup and 1 tbsp olive oil. Brush on chicken thighs, season with remaining salt and pepper.

    Heat a skillet over medium heat, cook chicken 6 minutes per side until cooked through.

    Add water to skillet, toss in Swiss chard, sauté until wilted, about 3 minutes.
