Herbed Citrus Grilled Chicken with Roasted Carrots

Ingredients

  • chicken breasts, boneless and skinless
    500g 1.1 lb
  • carrots, peeled and cut into sticks
    400g 14 oz
  • fresh parsley, chopped
    15g 0.5 oz about 1/4 cup
  • fresh thyme leaves
    10g 0.35 oz about 2 teaspoons
  • lemon zest
    1 tsp 1 tsp
  • lemon juice
    30ml 2 tbsp
  • extra virgin olive oil
    30ml 2 tbsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    In a bowl, mix olive oil, lemon juice, lemon zest, parsley, thyme, salt, and pepper.

    Marinate chicken breasts in herb mixture for 10 minutes.

    Preheat grill to medium-high heat.

    Toss carrot sticks with a little olive oil, salt, and pepper.
