Grilled Veggie and Hummus Wrap

Ingredients

  • whole wheat wraps
    2 wraps 2 wraps
  • red bell pepper
    1 medium (150 g) 1 medium (5 oz) sliced
  • zucchini
    1 medium (150 g) 1 medium (5 oz) sliced
  • red onion
    1 small (70 g) 1 small (2.5 oz) sliced
  • olive oil
    1 tbsp (15 ml) 1 tbsp (0.5 fl oz)
  • salt
    to taste to taste
  • pepper
    to taste to taste
  • hummus
    4 tbsp (60 g) 4 tbsp (2 oz)
  • fresh spinach
    1 cup (30 g) 1 cup (1 oz)

Method

    Preheat grill or grill pan on medium heat.

    Toss bell pepper, zucchini, and red onion with olive oil, salt, and pepper.

    Grill vegetables for 5–7 minutes until tender and slightly charred.

    Warm wraps for 1 minute on the grill or microwave.

    Spread 2 tbsp of hummus on each wrap.

    Layer grilled veggies and fresh spinach on wraps.

    Roll up wraps tightly, slice in half, and serve.
