Ingredients

  • chicken breast
    500 g 1.1 lb skinless, boneless
  • pumpkin
    400 g 14 oz peeled and cubed
  • green beans
    250 g 8.8 oz trimmed
  • olive oil
    3 tbsp 3 tbsp
  • fresh thyme
    2 tsp 2 tsp chopped
  • fresh oregano
    1 tsp 1 tsp chopped
  • salt
    1 tsp 1 tsp
  • black pepper
    1/2 tsp 1/2 tsp
  • lemon zest
    1 tsp 1 tsp

Method

    Preheat the oven to 200°C (400°F).

    Toss pumpkin cubes with 1 tbsp olive oil, 1/2 tsp salt, and half the thyme and oregano.

    Spread pumpkin on a baking tray and roast for 25 minutes until tender.

    Meanwhile, rub chicken breasts with 2 tbsp olive oil, lemon zest, remaining herbs, salt, and pepper.

    Sauté green beans in a pan with 1 tbsp olive oil and a pinch of salt until tender-crisp, about 5-6 minutes.
