Garlic Butter Shrimp with Asparagus

Ingredients

  • shrimp, peeled and deveined
    250 grams 9 ounces medium size
  • asparagus
    200 grams 7 ounces trimmed and cut into 2-inch pieces
  • unsalted butter
    30 grams 2 tablespoons
  • garlic cloves
    3 grams 3 cloves minced
  • lemon juice
    15 ml 1 tablespoon
  • olive oil
    15 ml 1 tablespoon
  • salt
    to taste to taste
  • black pepper
    to taste to taste
  • fresh parsley
    5 grams 1 tablespoon chopped

Method

    Heat olive oil and half the butter in a pan over medium heat.

    Add garlic and cook 1 minute until fragrant.

    Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink.

    Remove shrimp and set aside; add asparagus to the pan.

    Cook asparagus for 4-5 minutes until tender-crisp.

    Return shrimp to pan, add remaining butter and lemon juice; stir to combine.
