Ingredients

  • canned chickpeas
    240 g 8.5 oz drained and rinsed
  • fresh spinach
    100 g 3.5 oz
  • onion
    1 medium (150 g) 1 medium (5.3 oz) finely chopped
  • garlic cloves
    2 cloves 2 cloves minced
  • ginger
    1 tsp (5 g) 1 tsp (0.18 oz) grated
  • curry powder
    1 tbsp (7 g) 1 tbsp
  • coconut cream
    120 ml 1/2 cup
  • olive oil
    1 tbsp (15 ml) 1 tbsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste
  • flatbreads
    2 pieces (160 g) 2 pieces (5.6 oz)
  • fresh coriander
    a few sprigs a few sprigs optional, for garnish

Method

    Heat olive oil in a pan over medium heat.

    Add chopped onion, garlic, and ginger; cook until soft.

    Stir in curry powder and cook for 1 minute.

    Add chickpeas and coconut cream; simmer for 5 minutes.

    Add spinach; cook until wilted, about 2 minutes.

    Season with salt and pepper to taste.

    Warm flatbreads; divide chickpea curry between them.
