Ingredients

  • Arborio rice
    300 grams 1 1/2 cups
  • Mushrooms, sliced
    200 grams 7 ounces
  • Fresh spinach
    100 grams 3 1/2 ounces
  • Vegetable broth
    1 litre 4 1/4 cups
  • Onion, chopped
    1 medium 1 medium
  • Garlic cloves, minced
    2 cloves 2 cloves
  • Parmesan cheese, grated
    50 grams 1/2 cup
  • Olive oil
    2 tablespoons 2 tablespoons
  • Butter
    20 grams 1 1/2 tablespoons
  • Salt
    to taste to taste
  • Black pepper
    to taste to taste

Method

    Heat vegetable broth in a pot and keep warm.

    In a large pan, heat olive oil and sauté onion until translucent.
