Ingredients

  • quinoa
    150 g 3/4 cup rinsed
  • water
    300 ml 1 1/4 cups
  • cucumber
    100 g 3.5 oz deseeded and diced
  • carrot
    80 g 2.8 oz grated
  • red bell pepper
    90 g 3.2 oz deseeded and chopped
  • chopped fresh parsley
    15 g 1/4 cup
  • chopped fresh chives
    10 g 2 tbsp
  • lemon juice
    30 ml 2 tbsp freshly squeezed
  • extra virgin olive oil
    30 ml 2 tbsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Rinse quinoa under cold water.

    Bring water to boil; add quinoa, reduce heat and simmer covered for 15 minutes.

    Fluff cooked quinoa with a fork and let cool slightly.

    Combine quinoa, cucumber, carrot, bell pepper, parsley, and chives in a large bowl.

    Whisk lemon juice, olive oil, salt, and pepper; pour over salad and toss well.

    Serve immediately or chill for 30 minutes for flavors to meld.
