Ingredients

  • turkey breast
    600 g 1.3 lb skin-on, boneless
  • olive oil
    2 tbsp 2 tbsp
  • fresh rosemary
    1 tbsp 1 tbsp chopped
  • fresh thyme
    1 tbsp 1 tbsp chopped
  • salt
    1 tsp 1 tsp
  • black pepper
    0.5 tsp 0.5 tsp
  • carrots
    300 g 10.5 oz sliced
  • zucchini
    300 g 10.5 oz sliced
  • garlic-infused olive oil
    1 tbsp 1 tbsp low FODMAP substitute for garlic
  • fresh parsley
    1 tbsp 1 tbsp chopped

Method

    Preheat oven to 190°C (375°F).

    Mix olive oil, rosemary, thyme, salt, and pepper.

    Rub turkey breast with herb mixture.

    Place turkey on roasting tray and roast 45-50 minutes.

    While turkey cooks, heat garlic-infused oil in pan.

    Sauté carrots and zucchini 7-10 minutes until tender.
