Ingredients

  • chicken breast, sliced
    400 g 14 oz
  • fresh ginger, grated
    15 g 1 tbsp
  • turmeric powder
    1 tsp 1 tsp
  • carrots, julienned
    150 g 5.3 oz
  • green beans, trimmed and halved
    150 g 5.3 oz
  • scallion tops only, chopped
    30 g 1 oz green parts only, avoid white
  • garlic-infused olive oil
    2 tbsp 2 tbsp
  • tamari (gluten-free soy sauce)
    2 tbsp 2 tbsp
  • cooked jasmine rice
    300 g 10.5 oz
  • fresh coriander leaves, chopped
    15 g 0.5 oz for garnish

Method

    Heat garlic-infused oil in a large pan over medium heat.

    Add grated ginger and turmeric powder; stir for 1 minute.

    Add sliced chicken and cook until browned, about 5-7 minutes.

    Add carrots and green beans; cook for another 5 minutes until tender.

    Pour tamari over the stir-fry and mix well.

    Stir in chopped scallion tops and cook for 1 more minute.
