Lemon Herb Baked Haddock with Roasted Carrots

Ingredients

  • haddock fillets
    600 g 1.3 lbs skinless
  • carrots
    400 g 14 oz peeled and cut into sticks
  • lemon juice
    30 ml 2 tbsp freshly squeezed
  • olive oil
    30 ml 2 tbsp
  • fresh parsley
    15 g 0.5 oz finely chopped
  • fresh chives
    10 g 0.35 oz finely chopped
  • salt
    to taste to taste
  • black pepper
    to taste to taste

Method

    Preheat oven to 200°C (400°F).

    Toss carrot sticks with 1 tbsp olive oil, salt, and pepper. Spread on baking tray.

    Bake carrots for 20 minutes until tender.

    Mix lemon juice, remaining olive oil, parsley, chives, salt, and pepper.

    Place haddock fillets on a baking dish and brush with lemon herb mixture.

    Bake haddock for 10-12 minutes until opaque and flakes easily.
