Ingredients

  • cod fillets
    600 g 1.3 lb skinless, boneless
  • lemon zest
    1 tsp 1 tsp
  • garlic cloves
    3 cloves 3 cloves minced
  • panko breadcrumbs
    60 g 2.1 oz
  • parmesan cheese
    30 g 1 oz grated
  • olive oil
    2 tbsp 2 tbsp
  • salt
    to taste to taste
  • black pepper
    to taste to taste
  • fresh green beans
    400 g 14 oz trimmed

Method

    Preheat oven to 200°C (400°F).

    In a bowl, mix panko, parmesan, lemon zest, minced garlic, salt, and pepper.

    Brush cod fillets with olive oil and press mixture onto fillets to coat.

    Place cod on a baking tray lined with parchment paper.

    Bake cod for 12-15 minutes until fish flakes easily.

    Steam green beans until tender, about 5-7 minutes.
